Lapin_Republic's Meat Stew

Ingredient List

  1. Lamb shoulder (or beef ribs, beef brisket) diced, wash clean and put them in the cooking pot (a slow cooking one is preferred).
  2. Add: 3 pieces of ginger, half or one onion halved, two star anis, one cinnamon bark, a dry chilli to add spicy, some goji berry if you are really into tonic cuisine.
  3. Add cold water just over the meat, add 2 tsp soya sauce light (for taste) and 1tsp dark soya sauce (for color), some salt. Add the lid and medium to strong heat cook for 30 min.
  4. Then add some carrots, small to medium heat continue to cook for another 20min, season with salt and you have ready a really delicious and nutricious dish. It is the best tonic dish for the autumn time, when body start to need heat energy and nourishing build up to strengthen, for the winter.

Author's Note: Why adding salt twice? First time is to make sure the meat will be seasoned. Second time is for the carrots. If adding salt in the end only, the salty taste will only go inside the carrots, not the meat.

Also keep an eye on the water level, if too much water just need to open the lid to reduce it, if too little water, just add hot water a bit more during cooking.
