Ingredient List
- Bonda Ingredients
- 3 sliced red onion
- 1 inch ginger, finely chopped
- 2 green chili, finely chopped
- Several chopped curry leaves
- 2tbsp chopped coriander
- .25tsp turmeric
- .25tsp ajwain
- .5tsp salt
- 2C gram flour
- .25C rice flour
- .25tsp Baking Soda
- .25C water
Chutney Ingredients
- 13 dried red chilli pepper
- Hot water to soak the chili
- 2tbsp oil
- 2inch ginger, chopped
- 5 cloves garlic, chopped
- 1tsp Sugar
- .75tsp salt
- 1tbsp garam masala
- 2tbsp lemon juice
For the Bonda:
- Place the onions, ginger, chili, curry leavs, coriander, turmeric, ajwain and salt into a bowl and mix well by hand
- Squeeze the mixture as you are mixing to allow the onions to break up and take on the flavors better
- Add 1C gram flour, the rice flour, and baking soda to the mixture and mix again until moistened and clumpy
- After mixed, add another 1C gram flour and water and continue mixing until a dough like structure is made
- With a greased hand, sculpt the mixture into ball like shape.
- In a frying pan, add your frying oil and bring to temperature
- Add the balls into the frying pan, stirring occasionally
- Reduce the heat on the oil and continue to cook until the bonda are golden
For the red Chutney:
- Place the dried red chili into a bowl
- Place in hot water to cover the chilis and let soak until softened
- Transfer the softened chilis into a blender with more water and blend until a paste is formed
- In a frying pan, add the oil, ginger and garlic and saute until softened
- Add the blended chili paste to the pan and cook for 2 minutes until aromatic
- add the salt, sugar, and garam masala and mix well
- after mixed, add the lemon juice to the mixture and continue to mix
