Onion Bonda with Garlic Chili Chutney

Ingredient List

    For the Bonda:

  1. Place the onions, ginger, chili, curry leavs, coriander, turmeric, ajwain and salt into a bowl and mix well by hand
  2. Squeeze the mixture as you are mixing to allow the onions to break up and take on the flavors better
  3. Add 1C gram flour, the rice flour, and baking soda to the mixture and mix again until moistened and clumpy
  4. After mixed, add another 1C gram flour and water and continue mixing until a dough like structure is made
  5. With a greased hand, sculpt the mixture into ball like shape.
  6. In a frying pan, add your frying oil and bring to temperature
  7. Add the balls into the frying pan, stirring occasionally
  8. Reduce the heat on the oil and continue to cook until the bonda are golden
  9. For the red Chutney:

  10. Place the dried red chili into a bowl
  11. Place in hot water to cover the chilis and let soak until softened
  12. Transfer the softened chilis into a blender with more water and blend until a paste is formed
  13. In a frying pan, add the oil, ginger and garlic and saute until softened
  14. Add the blended chili paste to the pan and cook for 2 minutes until aromatic
  15. add the salt, sugar, and garam masala and mix well
  16. after mixed, add the lemon juice to the mixture and continue to mix
